I’m not sure, Kristin, but it would certainly be worth a try. When I sub egg whites for whole eggs, I usually use 2 whites for each egg. This would mean you’d use half an egg if you followed this recipe *exactly*. But, you know, there’s something to be said for being daring. I say try it with the whole entire egg! (I’ll be stepping out on the wild side next week and trying it.)
